Then it is hands on: tempering chocolate for that snap and shine, rolling ganache into truffles and coating them, or filling moulds and decorating bars with nuts, fruit and spices. It is a sweet, sociable session with plenty of tasting along the way, and everyone has a different idea of the perfect topping.
